Cooperativa Bosques Verdes, Peru
$5,000 raised · 2021
Zest funded fermentation tanks and sun-covered drying areas for smallholder coffee families in San Ignacio, Cajamarca, Peru, to improve quality and farm-gate price. Bosques Verdes matched the project with their own contribution, reaching 11 families with fermentation tanks and 7 families with covered drying modules.
Pillcocaja Coffee Farm

Experimental processing with the team at Pillcocaja, a long-term producer partnership bringing their great coffees to Australia. Manny and Darren represented Zest on the farm during harvest, picking, processing and drying alongside the team.

El Vergel Koji Project
Colombia · 2022
A hands-on project with long-term producer partners El Vergel, experimenting with Koji mould in processing to bring out exceptional flavours. Damon, Leo and Aryan were on the ground for the trial.
